2004 De Bortoli Yarra Valley Chardonnay 13% vol, Australia. A wonderfully silky and smooth Chardonnay, far removed from the over-oaked cheaper versions. With passion fruit, butter and hints of toasty vanilla on nose and palate, it’s great with creamy chicken pie.

2005 Nepenthe Sauvignon Blanc 13% vol, Australia. This classy, award-winning 100 per cent Sauvignon Blanc from the Adelaide Hills in South Australia is clean and fresh, with great acidity and an appealing weight behind it. If the idea of crocodile lasagne is just too much for you, try it with freshly-grilled prawns or scallops and bacon.

2005 McHenry Hohnen 3 Amigos 14.5% vol, Australia. A really top-class blend of Shiraz, Grenache and Mataro from Margaret River in Western Australia, full of warm, rich, earthy fruit. Enjoy it with wild boar sausages, as we did.

2004 Cape Mentelle, Cabernet Merlot 14.5% vol, Australia. Cape Mentelle, the sister company of Cloudy Bay in New Zealand, is one of the great names of Margaret River. This superb example of their wines, aged in US and French oak, is soft and supple, with generous fruit and gentle tannins. Perfect with rare fillet steak.
