Ingredients >
4 c. finality ground nuts
1 c. sugar
1 T. cinnamon plus 1 t. cinnamon
6 to 7 c. unbleached flour
5 t. baking powder
3/4 t. baking soda
1/4 lb. butter, softened
1 1/2 c. vegetable oil
1 c. orange juice
Syrup, instructions below

Method >
Whisk together nuts, 1 tablespoon of the sugar and 1 teaspoon cinnamon and set aside. Whisk together 6 cups flour, baking powder, baking soda and remaining cinnamon and set aside.
With electric beaters, blend butter, oil and remaining sugar about 5 minutes. Slowly blend in orange juice. Stir in flour mixture just until absorbed. Mixture should form a ball and easily pull away from sides of bowl; add more flour if necessary.
Preheat oven to 350 degrees.
Pinch off small pieces of dough, flatten in palm of hand and roll into an oval. Arrange on ungreased cookie sheet, bake about 20 minutes and transfer to wire rack to cool.
Dip finikia 4 or 5 at a time in simmering syrup, turning several times. Using a slotted spoon, transfer cookies to a colander to drain. Roll cookies in nut mixture and place on flat surface to cool.
Recipe should make about 5 dozen cookies.

Syrup
2 c. sugar
1 c. water
8 oz. honey
2 T. lemon juice

Method >
Bring sugar and water to a boil, reduce heat and simmer 10 minutes. Add honey and lemon juice and heat on medium-low 5 minutes. Keep syrup on low simmer until ready to dip finikia.
