Greek Spiced Paximadia

Ingredients >
1/2 c. vegetable oil
1/2 c. butter, softened
1 1/2 c. sugar
3 eggs
3 heaping t. baking powder
2 t. cinnamon
1 t. allspice
1/2 t. ground cloves
5 1/2 to 7 c. flour

Method >
With electric beaters, blend oil, butter and sugar. Beat in eggs one at a time. Mixture should be light and creamy. Stir in baking powder and spices. Gradually beat in 5 1/2 cups of the flour, until a soft dough forms; add more flour if necessary.
Preheat oven to 375 degrees.
Divide dough into 5 parts. Shape into long, narrow, flat loaves, about 2 1/2-inches wide and 1-inch thick. Spray a baking sheet with cooking spray and arrange loaves about 2 inches apart.
Cut loaves diagonally into 1/2-inch slices and bake about 20 minutes or until lightly browned. Reduce heat to 300 degrees.
Remove cookies from oven and slice again through marks while warm. Toast slices in oven on both sides until lightly browned.
Recipe should make about 5 dozen cookies.
