Scrumptious treats either for yourself or to give as gifts

Ingredients >
1 quantity vanilla shortbread dough (above) with the finely grated zest of 1 lemon added to the flour

To decorate >
1 tbsp lightly beaten egg white
1 tbsp lemon juice
200g icing sugar
150g tropical dried fruits, chopped
small handful silver balls
ribbon for hanging on the tree

Method >
Preheat the oven to 180°C/375°F/gas 4. Roll out the dough to 5mm thick and stamp out star biscuits using a 10cm cutter. Re-roll the trimmings to make more biscuits.
With a skewer, make small hole in one point on each star. Bake for 18-20 minutes until turning pale golden around the edges. Transfer to a wire rack to cool. While the biscuits are still hot, re-make the holes with the skewer.
Put the egg white and lemon juice in a bowl and beat in the icing sugar to make a smooth icing. With a palette knife, spread it generously over the biscuits to about 5mm from the edges.
Scatter with mixed fruits and silver balls. Leave for at least 2 hours to set. Thread with ribbon just before you hang them. Makes 16-18.
