Scrumptious treats either for yourself or to give as gifts

Ingredients >
325g plain flour
200g chilled salted butter
125g caster sugar
2 tsp vanilla extract
2 large egg yolks
icing sugar for dusting

Method >
Tip the flour into a food processor. Cut the butter into small pieces and drop them into the bowl, then whiz until the mixture looks like breadcrumbs.
Add the sugar, vanilla and egg yolks and whiz to a smooth dough.
Roll the dough on a lightly floured surface into a sausage shape. Wrap and chill for at least 1 hour.
Preheat the oven to 180°C/375°F/gas 4. Lightly grease 2 large baking sheets. Using a sharp knife cut the dough into slices and arrange on baking sheets.
Bake for 20 minutes or until pale golden around the edges. Transfer to a wire rack to cool. Dust generously with icing sugar and store in an airtight container. Makes 35.
