Very Green Plantains
Salt Water
Oil
Paper Bag
Red Sauce (recipe below, start before plantain)

1. Soak the plantains in very hot water for about five minutes. This will make them easy to peel. Take them out and cut off the ends. Make a few slits in the skin, careful to not hit the fruit itself.
2. Cut it into 1-1/2 to 2” chunks. Heat the oil and fry the chunks very lightly. Remove them from the oil.
3. Take a paper bag and with a plate, smash the chunk to about a half inch or so. Dip the “toston” in the salted water and refry to a golden brown. Be careful–The salt water will make the oil spatter!
4. Salt to taste or dip into red sauce (recipe below)

Salsa Roja > Red Sauce
1 small can tomato sauce (Spanish style preferred)
2-3 Tbls. minced garlic
3 Tbls. ketchup
1-3 Tbls sugar (to taste)
Dash of olive oil
 
1. Get the sauce going, before preparing the plantains.
2. In a small sauce pan, mix all the ingredients. Get it to a boil, cover, then set at the lowest heat possible.
3. Reduce into almost a paste. This might take 30-40 minutes.
