Ingredients >
1/2 cup Chopped raisons
1/2 cup Chopped sultanas
1/2 cup Chopped currents
1/4 cup Chopped glace cherries
1/2 cup Chopped mixed peel
1/4 cup Mixed glace fruits
1/4 cup Brandy or rum
1 litre chocolate ice cream (softened)
1/4 cup Blanched almonds, toasted and chopped
1/2 cup cream

Directions >
– Combine all fruit and spirits and let soak for a few days (overnight is fine if you’re pressed for time!)

– Mix fruit mix with the ice cream, almonds and cream

– Pour mixture into a five-cup pudding dish

– Leave to freeze overnight

To serve > Immerse basin in hot water to loosen pudding. Transfer to plates and serve with cream.
